Weekend Snapshots

This weekend was a good busy.  You know the kind?  Where you’re busy but you’re doing things that you love doing like furniture shopping and eating out at yummy places?  And going to art shows and watching a marathon of Julie Delpy movies on Netflix?  You know what I mean?  A super good busy.

Anyway here are some snapshots that I took this weekend (and these photos are all from my iphone because I may or may not have lost my camera’s battery charger in the move…which of course I will find the minute the new charger is delivered):

Quinoa Patties

I love the fact that quinoa is so versatile.  It works equally as well mixed with seasonal veggies and a simple vinaigrette as it does mashed into a patty.  And boy do I love things that are mashed into patties, don’t you?

Anyway, I found a recipe (online here) for quinoa patties in Heidi Swanson’s Super Natural Every Day cookbook (I could go on a 2-hour tangent gushing about how much I LOVE Heidi Swanson, her blog, and her amazing cookbooks but I’ll save it for another time),  and they turned out perfectly delicious; crispy on the outside and full of flavor on the inside (i.e. chives, yellow onion, salty parmesan cheese, yum yum yum, nom nom nom).

We paired the quinoa patties with tofu, spinach, roasted potatoes, and lots o’ red wine.  Next time (i.e. tomorrow since we have leftover patties galore), I’ll keep it simple and eat it with sliced avocado and tomatoes on a toasted bun (with a side of Dos Equis).

Weekend Update

For me, this weekend was all about relaxing and settling into my new apartment.  We strolled around the Brentwood Country Mart so I could visit my favorite store (Sugar Paper) and Kyle could visit his (Unionmade), we ventured to Ikea to pick up some random home furnishings, and we saw Bridesmaids (was hilarious).

We also did some of my favorite activities; i.e. shop at Zara, visit the Anthropologie sale, make coffee in a french press, roast veggies, and Netflix old episodes of Arrested Development.  I love low-key weekends!  Here are some highlights:

Last weekend, my best friends, Jaymee and Sarah, and I hosted a baby shower for our darling prego lover, Heather.  We decided on a carnival themed shower because a.) we love desserts and candy; b.) we love stripey straws; and c.) we love flag bunting.

The party turned out just perfect thanks to Jaymee’s amazing decor and signage (which, by the way, Jaymee has a new blog and it’s the cutest EVER and and anddd she does the most AMAZING graphic design i.e. blog headers, invitations, logos, ANYTHING IN THE WORLD so hit her up if you need some design done!).  I mean, look how adorable those signs are!!

Sarah and I were in charge of all food and boy oh boy did we whip up lots o’ food.  We made a fruit salad, green salad, my favorite Mediterranean orzo salad, a million pretty cupcakes, fresh homemade strawberry lemonade, and watermelon mint lemonade (those lemonade recipes will be posted soon as Sarah and I created quite a delicious concoction!!).  We also had trays of pasta ordered.  Everything was yummy.  And the best part was that preggy Heather loved it all and that’s what matters!!

PLUS, all of my best friends flew out from all over the good ol’ USA and I swear to you, we always have the BEST time when we’re all together.  Miss them already.
