My Favorite Quinoa Recipe

I make a ridiculous amount of quinoa.  Poor Kyle, he doesn’t even like quinoa but I force him to eat it because I like it so much.  It’s delicious and you’re eating it, I say!!

This particular recipe is my favorite way to prepare quinoa.  Simple, easy, and full of flavorful ingredients.  I love it so much I even made it for the bridal shower I co-hosted.

For this recipe, keep in mind that I completely eyeball all ingredient measurements so the list is meant only as a guide.  You can use more or less of any ingredient – totally up to you.  Quinoa is so easy and accommodating.  You can pretty much mix anything with it and it will still taste good.  Thanks for being so great, quinoa.

Quinoa with Cranberries and Pinenuts:
Serves 4-5 

  • 1 cup uncooked quinoa
  • 2 cups chicken stock (or vegetable stock, or water)
  • 1/2 medium-sized cucumber, chopped fine
  • handful of fresh parsley, chopped
  • 1/4 of a red onion, chopped
  • 1/2 cup dried cranberries
  • 1/3 cup pinenuts, toasted
  • salt & pepper, to taste
  • 1-2 tablespoons lemon-infused olive oil (or lemon vinaigrette)

To make quinoa, combine 1 cup uncooked quinoa with 2 cups chicken stock (or water) in a medium saucepan and bring to a boil.  Once boiled, turn the heat down and let it simmer, covered, for 15 minutes.

Meanwhile, toast the pinenuts in a pan until they are golden brown and smell nutty and delicious.  Chop the cucumber, parsley, and onion (I usually just toss them in a food processor and pulse it a few times – way easier!).  Combine the chopped veggies with the cooked quinoa in a mixing bowl.  Add the cranberries, toasted pinenuts, and salt & pepper.  Swirl in lemon-infused olive oil, 1 tablespoon at a time.  If you like it a little more dressed, add another tablespoon.

If you don’t have lemon-infused olive oil, don’t fret my pet!  A few squeezes of lemon juice and a swirl of extra virgin olive oil will yield the same results.  Also, if you don’t have pinenuts (because dang those things are expensive), any kind of toasted nut will do just fine.

The longer the quinoa sits in the dressing, the more flavorful it becomes.  Store it in the fridge and it will last a few days.  Or don’t store it and eat it all at once.  That’s what I usually do.

I’m starting a new thang on the blog called “Style Recipes.”  Sidenote: When I got my driver’s license at 16, I wanted a custom license plate that said MZTHANG.  Really glad I didn’t go through with it.  Anyway, so this new thang I’m doing involves some outfit postage.  I’ve always wanted to do more outfits around here but never really got the ball rolling.  Well, it’s rolling now.  Are you cool with it?  I really hope so because sometimes I have mixed feelings.

So now that the ball is officially rollin’, I wore this outfit to my cousin’s wedding a few weeks ago.  Usually, I gravitate towards neutral colors but I couldn’t resist pairing this bright fuchsia dress with an even brighter red clutch.  Bright + bright = all right.  Cheesy?  I’m getting to that age where I start saying cheesy things and I don’t realize I’m saying them.

Is it just me or do the weeks literally fly by?  I could swear I was just watching 4th of July fireworks and now I’m buying pumpkins for Halloween.  It’s weird how quickly time goes by as you get older.  Make it slow down!  And, ummm, speaking of time flying by, I can’t believe I’ve been with that guy for more than 7 years.  Crazy talk.  This photo was taken at my cousin’s wedding a few weeks ago – more photos to share on Monday.  In the meantime, here’s what I’ve been loving lately:

  • This is my new favorite shade of burgundy lipstick – perfect for fall!
  • Downton Abbey season 3.  I love you Lady Mary.  I’ve been sneak-watching the episodes on the interwebs, don’t tell anyone.
  • Crockpot turkey meatballs.  Slow cooker recipes are the BEST EVER.
  • Mini pumpkin pies.
  • Counting down the days until the Everlane silk blouse comes out.  They never disappoint.

Travel bug

Right now, I’ve got the itch to travel.  I think it’s because a few people I’m following on Instagram are off in faraway places, taking beautiful ‘grams every step of the way.  Paris?  Can I go with you, Instagrammer?  Can I take a bite of that chocolate croissant you’re eating?  Can I walk down those Italian cobblestone streets eating a gelato with you?

Even if it’s just driving up the coast of California, I want to get away and  explore the world (with my phone in hand so I can instragram).  You too?

Co-hosting a bridal shower

This weekend, I co-hosted a bridal shower for one of my very best friends, Jaymee.  Together with my friends Heather, Kim, and Taylor, we tried to create a really special evening for Jaymee, filled with lots of little details that we knew she’d appreciate and love.  And boy did she love it!  The night was so amazing and we couldn’t have done it without lots of help from our mothers (thanks moms!!) and our friends (shout out to Ann-Marie and Diane!).

Each of the co-hosts had their own tasks leading up to the party:  Heather did major DIY (cutting and sewing all the garland as seen below!) and the desserts; Kim did decor, DIY, and rentals; Taylor did flowers, all of the design elements, and the small details; and I did the food.  I am in such awe of these girls!  They created a truly beautiful setting for the shower and it was so fun planning with them.

I’m really sad because I didn’t get many photos of the food, but after 2 days in the kitchen, I think I might start a catering business.  SO. FUN.  I’ll come back in another post later this week and talk about the food in greater detail.
