RAW ZUCCHINI SALAD

New favorite salad alert! Sometimes a great salad recipe comes around and you just gotta hold onto it tight and never let it go. Especially in the summer, when squash is aplenty and fresh Mediterranean flavors are exactly what you’re craving. I found this recipe on the Free People blog via Cookie & Kate and it’s seriously the best. Here it is, modified slightly since I only had zucchini and no yellow squash. Although I’m sure that yellow squash would kick this salad out of the park. PS, it’s even better the second day when all the flavors have intensified. TRUST!

RAW ZUCCHINI SALAD
Serves 4
recipe adapted from Cookie & Kate (here)

1 1/3 cup Israeli couscous (I used a whole box from Trader Joe’s and just followed the directions on the box)
1/3 cup olive oil
1 lemon, juiced
1 garlic clove, minced
1 shallot, minced
pinch of sea salt and ground black pepper
1 cup chickpeas (or use the whole can if you’re like me)
1 pint grape or cherry tomatoes, chopped
1/3 cup crumbled feta (or more if you’re like me)
10 kalamata olives, sliced (or more!)
2 medium zucchinis, sliced into super thin rounds using a vegetable peeler or mandoline (I used v. peeler and it was easy)
1/3 cup pinenuts, toasted
1/3 cup basil, chopped (I used a little less)

Ok I know that looks like a lot of ingredients, but I promise it’s easy and worth it.

To cook couscous, like I said, I just followed the directions on the box from Trader Joe’s, but here are C&K’s directions, which are slightly different: Bring 1 2/3 cup salted water to boil. Stir in couscous, cover, reduce to simmer. Cook for 18-20 minutes until couscous is cooked through and water is absorbed.

While the couscous is cooking, whisk together the olive oil, lemon juice, garlic, shallot, sea salt, and black pepper in a large bowl. Add the cooked couscous and toss to coat.

Toss the couscous with the remaining ingredients (chickpeas, tomatoes, feta, olive, zucchinis, pinenuts, and basil) until mixed together.

Season with salt and pepper to taste. Never look back.

Confession: I kind of like when it’s unnecessarily hot outside. Oh no, not the muggy kind of heat, hell no. But the dry heat when the wind feels like a heater on your face…that I can deal with. I grew up in the valley, which, if you know anything about the valley, it’s that it’s hot as heck on a regular basis, so I guess you could say I’m used to it. Or more like: I can deal with it. So bring it on. Bring on the all the 100 degree days, summer.

Also, I’ve been preoccupied lately, which has kept me away from blogging on the regular, but I was promoted at my job, so that’s a good excuse right? This blog post is filled with long, comma-filled, run-on sentences and I apologize for that. But sometimes a girl’s gotta have a few awkward sentences to get her point across on a Monday. But yes! I was promoted and now I’m real fancy! Just kidding on the fancy part, but I’m pretty excited about it. Also, I’ve been marathoning the TV show, SCANDAL, and oh my goodness, I am HOOKED. I watch like 5 episodes at a time. SO GOOD. So let’s be honest, that’s really the reason I haven’t been blogging. Whoops. More posts this week!

FIRST WEEKEND OF SUMMER GOODNESS

Summer, you arrived 3 days ago and you’re not messing around. You’re extra warm and cloudless and delicious. Two thumbs up. Needless to say, this weekend was WAY TOO SHORT. Oh and hiiii since I didn’t blog last week. But back to this weekend. We spent the majority of Saturday at the beach, slathered in sunscreen and without a care in the world. There were also a few acai bowls involved. One of us got sunburned (not I) and the other went from pale to dark pale.

Then, one of my best friends, Sarah, came and stayed with us for the night (she lives in North Carolina now) and we had such a fun time together, reminiscing about high school (i.e. mapping out who we went to formals with) and discussing the pros and cons of spin classes. Always a good time with that gal, I swear.

Sunday was spent at Dwell on Design (a post coming soon) all thanks to Kyle winning tickets to it ON THE RADIO. I guess people still win things on the radio? It really happens, guys! We walked around that design mecca until our feet couldn’t move and even spotted Bryan Cranston (WALTER WHITE!) in the crowd. I didn’t realize Mr. White was a fan of green design. Other Sunday activities included: a visit to Parachute Market and a 2 hour nap sesh.

You were real good to us, first weekend of summer. REAL GOOD.

Sometimes all you need is the Friday afternoon sunshine, one of your best friends, and a couple of ice creams to really end the week on a high note. Work has been pretty crazy lately so it’s nice to get outdoors and just enjoy a dang chocolate cone with lots of laughs and giggles and intermittent shouts of “YAY YOU LIVE HERE NOW!!” (she moved here from Hawaii).

This summer is going to be a good one, I can feel it!

STYLE RECIPES: THE DREAM OF THE 90’s

You guys, I’m addicted to buying plants. Can’t stop, won’t stop = my plant-buying philosophy. I’m also addicted to online shopping and that’s a real issue, whereas plant-buying is totally okay to do. For example, this dress from ASOS is something I didn’t need at all, but it sure made me smile so I put it in my online cart and look how precious it is? I feel like I stepped into 1992. All I need are some black Converse, a scrunchy or two, and a choker necklace, which lucky for me, are all on their way thanks to another online shopping excursion (kidding! I’m so not ready for a choker necklace). But plants? Those are definite needs. THEY GIVE US OXYGEN, for goodness sake. They do, right? My last science class was like 10 years ago probably.

Just so you know, I air out all my issues here so I don’t have to pay for therapy. So thanks! Anyway, I wore this get-up to the Everlane party this weekend, which by the way, was a total blast. Great venue, great food, great people, great company. Here’s an instagram from it.
